Brilliant Recipes For The Microwave Chef

There’s nothing better than a tasty meal after a long day at work. If you’re more of a microwave fan than a cordon bleu chef, there’s no need to worry. Using your microwave and these delicious recipes, you’ll be cooking up a storm in no time at all.



Refreshing spring risotto
Risotto is notoriously time-consuming, but not when you have a microwave. In just a few minutes, you can create a hearty, healthy meal, which is also cheap and easy. Add chicken stock and a dash of white wine to microwaveable rice and cook for 10 minutes. Stir, add more stock and cook for another 3 minutes. Pour in frozen peas, beans and broccoli to boost your 5-a-day count and set the timer for 7 minutes. Open the doors, take in the aromas, serve and enjoy!

Succulent salmon
It’s common to grill salmon, but you can also cook it in the microwave. Place your salmon steak on a piece of greaseproof paper, season with salt and pepper and cover in thinly sliced leeks and garlic. Add a tablespoon of creme fraiche and close the paper parcel. Microwave for 5 minutes. Serve with boiled new potatoes and green beans. Many people cook salmon in foil to preserve its moisture. This is something not to put in your microwave. Anything metallic could cause an explosion.



Comforting jackets
Nothing warms you up on a chilly day better than a jacket potato. Pierce the skin of your spud and place it on a plate in the microwave. Depending on the size of the jacket, you will need to set the timer for between 10 and 20 minutes. While your potato is cooking, prepare your filling. Popular choices include tuna mayonnaise, baked beans and cheddar cheese. If you like a crisp skin, preheat your oven to 200 degrees, take your potato out of the microwave and cook for 10 minutes. Place your jacket on a plate, slice open and add your filling.

Chocolate fudge
If you’re a dessert fan, this simple recipe won’t fail to impress. All you need is a large bowl and some chopped walnuts, dark chocolate and condensed milk. Combine the ingredients with a drop of vanilla essence and then microwave for 2-3 minutes. Remove the bowl and place the mixture into a baking tray. Refrigerate for 2 hours and then cut up into small pieces.

Quick and easy asparagus soup
Soup is healthy and filling and it takes just a few minutes to prepare in the microwave. Chop up an onion and place in a bowl with butter. Microwave for 2 minutes until the butter melts. Add vegetable stock, chopped asparagus, salt and pepper. Cook for 12 minutes and then smooth using a blender. Add 250ml of semi-skimmed milk and then cook for another minute or two until piping hot. Serve with a fresh bread roll.  

Microwave meals don’t always have to involve removing a lid and piercing the film. With these simple recipes, you can create healthy, delicious meals with minimal stress.
