Summer getaways

Summer is really close. For Arizona, summer starts this Friday! yikes! I am not ready!!! But for those of you who are wondering what to do this summer. I have some ideas that I think you may enjoy.

1. Niagra Falls, Canada. I remember this trip when I was younger. It was so much fun. Granted, nowadays it’s a bit harder to get across the border to Canada, and back, its really worth it. To ride the boat that takes you up to the falls, and walk in the caves behind the falls. Its so amazing. I am sure it has changed a bit over the years, but at the same time, I am sure the old goodies are still there too. I remember there was this simulator ride that made you feel like you were going over the falls. It was so realistic, and so crazy. It was insane.  But crazy fun. Niagra falls at night, wow. The Falls have lights in different colors that are projected onto the water itself. Its so pretty, and so breathtaking. During the day, if you are in the right angle when it comes to sun and water mist, you can see the rainbows they make. Little kids would love that.
If I remember correctly, there was this cool tower building, that you get inside, and it takes you up to the top, and spins – slowly – so you can view the entire area. Its really wonderful, and I think kids would really love it. I did when I was younger. I still have memories today.


Snacking Healthy?

Question: What keeps you from having healthy snacks on
hand when you are out of the house?

Well, for starters, generally there isn’t anything healthy out there for on the go. In order to snack healthy, I would have to load them in my purse. The chances of me carrying a big purse – well, ok, I’ll admit, it’s a 50/50 chance. But I also have smaller purses, in which nothing extra would fit. Healthy snacks, for me, are pretty much veggies and fruits. I don’t want to count calories, or anything, so I don’t bother with those 100 calorie packs, because quite frankly, I don’t think limiting your calories matters too much. Honestly. If you eat smaller, proportionate meals, that are healthier, you will have a better chance of loosing weight. Also gotta pair that with exercise.  Counting calories and carbs I think is a waste of time. No offense to those of you who do that/swear by that/have lost weight by doing that. Congrats to you. But me – no. I have had lots of doctors, people, and even health shows say that counting carbs and cals is not going to help everyone. Denying your body what it wants/needs is not good. And some people need more carbs/cals than others. So… yea.

So, I know we all like freebies. What sites do you go to in order to find freebies? Do you follow blogs, subscribe to newsletters, get daily emails? What?! Share.

I am going to start sharing what I get in the mail. I get lots. Between trial size, full size, and things with actual monetary value. For example, I was lucky enough to be one of 10,000 people chosen to get a Google Chrome Notebook before its released to the public. Its really awesome, and you should get it when it does come out on the market.

Ive gotten Amazon.com gift cards, PayPal payments, gift cards, jacket, cooler, coupons for free stuff... lots. I love free things, and I am going to slowly but surely share my secrets with you all. I would love it if you share your resources with me :)

Signature pasta recipe :)

Although I am not Italian, I love pasta. I love, love, love it. Creating one that my family will love, is a great way for me to keep pasta in the house, and it will never get old.

I have a recipe. It started with my mother in law, but I changed it, and made it my own.

You need Ziti noodles, 1 boneless skinless chicken breast per person (at a minimum). 2 cans (or more as needed) of Ragu Cheesy Alfredo sauce. And herbs such as: thyme, oregano, bay leaf, basil, kosher salt, and pepper.

Boil the chicken breasts in a pan of hot water. You want at least enough water to cover the chicken. Boil over medium heat. Slow and steady wins the race. If you put it on high, my experience is that it will boil and start to over boil the edges of the pan, and the inside will not be cooked. So cook it on medium heat, and it will cook right.  Add in 1 bayleaf, and a few pinches of the other herbs/spices, thyme, oregano, basil, etc. I find its better to crush the herb in your fingers before sprinkling in the pan. Put a few shakes of kosher salt ( I love to cook with this ), and a shake or two of pepper.

While the chicken is cooking. Start to boil your noodles. cook all the way through. Strain, do not rinse. Place back in pot, and do not put back on the hot burner. Put on a burner that has not been in use. 

While the chicken is cooking, you will see white stuff floating around. That is the fat coming off the chicken. Its awesome to see that. Personally, I hate the fat on chicken, so when I realized that the fat boils off, I was so happy. What I do to check the chicken to make sure its done, is to take the chicken breast out of the pan. Place on a plate, and cut lengthwise into strips. If it is done, you do not have to put back into the pan. If it is not all the way done, than put the strips back into the pan and let cook until done. Usually for me, about 20-30 min cooks the chicken all the way. Once the slices are done, cut into smaller bite size pieces. Mix the pieces into the cooked noodles. Then add the jars of Ragu Cheesy Alfredo sauce. Mix well to incorporate. If you need to put back on burner to heat it up, do it, but be careful. You don’t want it to over cook or burn.

Serve it up on a plate, with either garlic bread or french bread (my fav). Simple salad on the side with Italian dressing makes it much better.

I am totally over the moon right now....

And I am sure you want to know why, right? Well. Let me tell you...

I feel like the luckiest girl in the world right now. I didn't think I could win something this big, ever. This, to me, is like winning the lottery.  I just found out I won an iPad 2!!!! Yes, an iPad 2. I am on like cloud 9 right now. Forreal. I never thought I could be so lucky!

Graduation…

Graduation is right around the corner for most folks… Closer to most here in Arizona, as they graduate at the end of May, rather than a week into June…
I remember my graduation. How could I forget? I was like 8 months pregnant with my son. Insane. I was so emotional. I cried at the speeches, and I blame it on being pregnant. Hormones and all. Thankfully, I was sitting next to people who knew that I was pregnant, and had tissues on hand LOL . I was such a mess. Partly, because I was pregnant, yes. But really, at graduation you realize your no longer a kid. You are responsible for yourself now. You are going onto college, or whatever your plans may be… You realize that all your hard work has paid off. You finally did it!  Its like a weight lifted. Now you know you can go to college and get a great job making good money (hopefully). 
I remember in the audience was my mom, dad, and sister. And of course my circle of friends parents were there cheering us all on… It was great. I still have pictures (somewhere).

Everyone has a graduation coming – whether it is a pre-school, kindergarten, high school or college graduation. I am sure you know someone that’s going to graduate from something. Why not make sure you can remember this moment forever! This is not something you want to ever forget..

Working from home is so fun to do!

Because I can do what no one else can. I can dye my hair pink. I can dye it purple if I felt like it. But I did do my hair pink.. Well, just my bangs, and some of my longer layers. :) I like it.. I should post a picture here. At the very least, its on my Facebook.

With this new venture, I am working with Pierce-Eilsen, and basically doing Market Research -thats really the easiest way to say it. And I love it. I am calling some cool, interesting places, and finding that North Carolina really is not expensive. Carrboro is becoming my favorite. Decent prices, I actually looked at a few of the apartments websites, and the properties are beautiful. 2 hours from the ocean. Oh, Eric would really love that. My husband, Chris, used to live in Wakeforest, about an hour and a half or so away, and he said it was really pretty. It doesn't snow there like it does in Ohio, and its not as hot there as it is here. Oh I am so excited. I think he is up for it, and I know Eric would love to.  Now, its just a matter of saving money, or hitting the lottery LOL.

Ok. Now the AC guy is here. Hopefully to fix it :) Yay!

How do you reward yourself?

How do you reward yourself after you have worked hard towards a goal?  Do you have any pampering rewards thought out for future goals?

 

Well, if I reach a goal, I usually get rewarded with iTunes, or shopping for a new favorite dress at Target (they have some really cute dresses!), or I get to order from one, or sometimes more than one, of my favorite sites (EdenFantasys, EyesLipsFace, ShopTheLook).I love those rewards. Nothing there is harmful to my health, nothing requires calorie counting, I don’t need to watch how much I use of them, I can have as much as I want. Its much better filling my online cart up, than filling myself with fattening foods at my favorite restaurants (I swear, is AppleBees, the Keg steakhouse, or IHOP). I think its much more rewarding, and it lasts much longer than food. 

I would love to hear how you reward yourself.

Alright. So with that said…

This week has been interesting. I had to resign my position at Uhaul, because my internet is not what it needs to be to work from home. So – long story short, the other ISP in my area actually doesn’t provide service to my zip code. Not like were in the middle of the desert. We are in the middle of the city. and actually, my neighbor is in the other zip code, that does get serviced. I was pissed, and posted it on their Facebook wall, saying how can someone 10feet away get service, but I cannot!?  So because of that, they are doing what usually takes a year, in only 4-6 weeks! So my manager told me that it would be best to resign, and he would put in the paperwork what is going on, that way when it is fixed, I can get my position back. Woo! So about June or so, I will have it back… BUT, I have gotten a job that is part time. Its with a company that does market research. Pay is hourly, and decent. I like it, I start Monday. I am excited. Its also at home. So I got rewarded with a $30 haul from EyesLipsFace – Ooh how I love makeup!

I went to my doctor to do a pregnancy test. I am not pregnant. That sucks. But since I am not, I am back on depo for birth control. This will allow me to focus on loosing weight. I plan 3 years. Then I should be down by 100 pounds – or close – and then I can try again for having a baby. I am putting my ass in gear. He is referring me to a bariatric doctor to get me with a nutritionist and whatever else he can do. 

I told my doctor that I am excessively thirsty. I asked what can cause that. I mean literally, a 2ltr of pop a day – or more if I allow myself. But I am drinking water by the gallon. Daily. Sometimes more than a gallon… What is wrong? He said it could be a pre signifier for diabetes!!!! Omg, are you kidding me?! so I think they are gonna have me do blood work to be sure. But jeez, I hope I do not have that. It would mess me up bad!!! Another reason to get my butt in gear.

 

In other news. I plan on turning into the crazy coupon lady! I want to save money like those people on extreme couponing in TLC do. Its amazing what they can do.  I cannot wait. Ill let you know how that goes.

 

Alright. Im off for now.. Im tired, and I gotta work tomorrow…
